POMEGRANATE PISTACHIO CHIA PUDDING

Serves 1

Ingredients:
3 tbsp chia seeds
180mls coconut or almond milk (unsweetened - I like Plenish and Rude Health milks)
1 tsp vanilla extract
40g pomegranate seeds
1 tbsp pistachios, chopped
Method:
1. In a small bowl, combine chia seeds, vanilla and milk.
2. Cover, and refrigerate for 20 mins (or overnight).
3. When ready to serve, stir the chia mixture, then layer in a glass with pomegranate seeds. 4. Top with pistachios
Make It Your Own
This chia pudding is incredibly versatile, so feel free to get creative with the toppings.
Try swapping the pomegranate for berries, chopped apple, pear, mango, or kiwi, and experiment with different nuts and seeds such as almonds, walnuts, pecans, pumpkin seeds, or sunflower seeds.
Using a variety of fruits and nuts not only adds different flavours and textures but also helps increase the diversity of plant foods in your diet, which is great for supporting a healthy gut microbiome.
